You can manage your subscription through Google by following these instructions. However, according to their procedure, a plan can only be upgraded at the end of your current subscription period. Therefore, to upgrade, you'll first need to cancel your existing subscription and then purchase a new one.

After you cancel, your current subscription will stop at the end of the current billing cycle. Then (or sometime before the expiration—to continue your current workout plan), you can switch to another subscription plan.

Please also make sure to change the plan at least 24 hours before the end of the current billing period to avoid being charged for the renewal of your current plan.
